While it does not state, I would caution using lab equipment in the cafeteria and letting students eat the food. The change in location does not make the equipment safer. In these activities, students are led to develop investigations where they test claims that have been made about consumer products (in this case, food). I have found using food a motivating factor in the past in my classes (making adjustments for medical conditions as necessary) so I can see why the author suggested these lessons. The lessons provide a means to get students to practice measurement and to use that data in a meaningful way. I would recommend this article for any classroom from intermediate up that need to work on these skills.
