Regular or Diet Soda? Developing a Procedure to Test How Sugar Compares to Sugar Substitutes in Yeast Fermentation

If your students are ready to take on more responsibility in the lab, then this is the experiment for you. This experiment guides students through the process of creating their own procedure to test a given independent variable. Students are instructed about the proper format for a procedure, and are given tools to support their efforts, such as the lab setup, identification of variables, and a general overview to convert into scientific procedure format. The experiment allows students to get comfortable with the process of creating a procedure so that they can start directing their own experiments in the near future. This opportunity for skill improvement is embedded in a lab experience that tests the impact of using a sugar substitute with yeast in the creation of blueberry soda. The final product provides the perfect motivation for students to work hard to write a detailed procedure, while gaining knowledge about microorganisms in food products.
