This high school physical science lesson has the following learning goals for students: recognize that diastase is an enzyme that facilitates the breakdown of starch into sugar; design a procedure for evaluating whether the amounts of the substrate and enzyme affect the speed of the reaction; effectively communicate, in writing, the procedures they developed so that fellow students can follow their procedures; and determine that the ratio of substrate to enzyme does influence the rate of the reaction.
